This breakfast recipe is an effortlessly creamy, healthy way to fuel you through any online or in-person day. Smooth and rich, chia pudding is full of healthy omega-3 fatty acids, and mango provides a burst of freshness and is vitamin-rich. I love to make this recipe the night before to let the chia pudding set and to make mornings oh-so-enjoyable.
Mango Chia Layered Parfait
Ingredients
Chia Pudding
¼ cup chia seeds
1 cup milk of choice
¼ cup yogurt of choice
1 tsp pure vanilla extract
1 tsp ground cinnamon
Pinch of salt
Mango purée
½ ripe mango, peeled
Milk or water, to consistency
Toppings
Chopped mango or frozen mango pieces thawed for a few seconds in the microwave
Method
In a bowl, combine all the chia pudding ingredients and whisk thoroughly to avoid clumps.
Allow the chia pudding to set for 15 minutes while you make the mango purée, stirring occasionally to ensure even consistency.
In a blender, place your mango. Blend until smooth and creamy, adding a drizzle of milk as needed to create the desired consistency.
Give the chia pudding a final whisk to combine. It should be evenly distributed and slightly thickened, but it will thicken more overnight.
In a jar, glass, or clear container, layer the mango purée, the chia pudding, the mango purée, the chia pudding, and so on, finishing with the chia pudding. You may want to spread each layer with a spoon as you add them so there are distinct layers on the sides.
Place in the fridge overnight. In the morning, top with chopped mango or thawed frozen mango pieces. Savor and enjoy!
